Equipment, Carboy for Ice Wine
You have two alternatives for making ice wine or any other Speciale product: obtain a 3-gallon carboy, or make a double batch in a 6-gallon carboy. In the double batch, you would simply use all the ingredients provided in two kits.
Do not, however, try making 3 gallons of wine in a 6-gallon carboy. This would leave too much air space, and your wine would oxidize. The results would be very unsatisfactory
Note that the secret to success with Speciale wines is starting them at the top end of the temperature range (24C/75F) and stirring them very thoroughly on day one.
